Rhiannon's recipe for school

NAME: Rhiannon Butlin YEAR: 3

TITLE OF RECIPE: Glamorgan Sausages - Selsig Morgannwg
Vegetarian.

ORIGIN OF RECIPE: Wales

HOW MANY PEOPLE DOES IT SERVE:4

APPROXIMATE PREPARATION TIME: 30 min

INGREDIENTS
5 oz (150g) fresh breadcrumbs
1 small leek, finely chopped
3 oz (75g) Caerphilly cheese, grated
1 Tablespoon fresh parsley, chopped
salt & pepper
pinch of dry mustard
3 eggs
flour
oil for frying
extra breadcrumbs for coating

COOKING TEMPERATURE: (frying)

METHOD:
1. Mix together the breadcrumbs, leek, cheese, parsley, seasonings and mustard.
2. Beat together 2 eggs & 1 yolk and use this to bind the mixture, adding a little milk if the mixture is still too dry to hold together.
3. Divide into 12, roll into sausages and toss in flour.
4. Beat the remaining egg white until frothy, brush over the sausages, then coat them in extra breadcrumbs, chill in the fridge for 20 minutes.
5. Fry gently in oil until crisp and golden brown on all sides.

SERVING SUGGESTIONS: Serve warm with chutney.

Rhiannon is in Boston...so we went to Legoland

Rhiannon has gone to Boston with her Grandma, leaving us behind. So that Carys doesn't feel neglected we've been trying to "do things" (as opposed to normal life, when we do "nothing"). Today we went to Legoland and let Carys choose what to do (she is very fond of the Lego animals and of the show "where they keep falling in the water"). The weather was very windy, so we had to keep Carys wrapped up and avoid anything with water, and take lots of opportunities to stop for coffee. We finished up at the shop where we managed to avoid buying even more Lego, but let Carys buy two whistles, so I guess she and Rhiannon can go out clubbing with them, or something.
